Aim for peaks around −6 dBFS (−12 to −3 is fine). Never touch 0 — a clipped take can't be fixed. Below −30 the noise gets louder when takes are levelled.

Your recording offset is calibrated once with a loopback test (beat out → back into the input). On the tested rig it measured about 21 ms. There is no slider to shift a take after recording.
